Ingredients

1 can salmon (1415 oz), drained and flaked

1 cup breadcrumbs

2 eggs

1/4 cup mayonnaise

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon lemon zest

1 tablespoon lemon juice

2 tablespoons chopped parsley or dill

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil or butter for frying

1/4 cup mayonnaise

1 tablespoon lemon juice

1 small clove garlic, minced

1/2 teaspoon Dijon mustard

Pinch of salt


Instructions

1. In a large bowl, combine the salmon, breadcrumbs, eggs, mayo, Dijon mustard, garlic, lemon zest, lemon juice, herbs, salt, and pepper. Mix until just combined.

2. Shape the mixture into 6–8 even-sized patties, about 1/2 inch thick.

3. Refrigerate the patties for 20–30 minutes to help them firm up.

4. Heat olive oil or butter in a skillet over medium heat. Fry each patty for 3–4 minutes per side until golden brown and cooked through.

5. For the sauce, whisk together mayo, lemon juice, garlic, Dijon mustard, and salt until smooth. Adjust seasoning as needed.
