Ingredients

1 lb (450g) ground pork sausage

1 small onion, finely chopped

1 garlic clove, minced

1 tsp dried thyme or sage

1/2 tsp salt

1/2 tsp black pepper

1 tsp Dijon mustard (optional)

1 large egg, beaten (for egg wash)

2 sheets puff pastry, thawed

Sesame seeds and/or nigella seeds for topping


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix sausage, onion, garlic, herbs, salt, pepper, and mustard until well combined.
  3. Roll out puff pastry sheets and cut each into two rectangles.
  4. Shape the sausage mixture into logs and place one along the long edge of each rectangle.
  5. Roll the pastry over the filling and seal the edge by pressing gently.
  6. Cut each long roll into 4–5 smaller pieces.
  7. Place rolls seam-side down on baking tray, brush tops with beaten egg.
  8. Sprinkle with sesame or nigella seeds.
  9. Bake for 20–25 minutes until golden and cooked through.
  10. Let cool slightly before serving.
