Ingredients
1 pound Italian sausage
10 ounces cheese tortellini
1 can (14.5 ounces) diced tomatoes
2 tablespoons tomato paste
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups chicken broth
3 cups fresh spinach
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
1. In a large Dutch oven, cook the sausage over medium-high heat until browned and cooked through. Drain excess grease.
2. Add the diced onion and cook until soft, about 4-5 minutes. Stir in the garlic and cook for 1 more minute.
3. Mix in the tomato paste and cook for 1-2 minutes to bring out its flavor.
4. Add diced tomatoes, chicken broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring to a simmer.
5. Add cheese tortellini and simmer for 5-7 minutes or until tender.
6. Turn off the heat and stir in the spinach until wilted.
7. Serve hot with grated Parmesan and enjoy!
Notes
If freezing the soup, leave out the tortellini and add fresh when reheating.
