Ingredients

1 lb beef sirloin or ribeye, cut into 1-inch cubes

12 oz linguine pasta

4 garlic cloves, minced

4 tbsp unsalted butter

1 cup heavy cream

2 tbsp olive oil

1/4 cup chopped fresh parsley

1/3 cup grated Parmesan cheese (optional)

1 tsp salt

1/2 tsp black pepper

Instructions

1. Bring a large pot of salted water to boil and cook linguine until al dente. Drain, reserving 1/2 cup of pasta water.

2. Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Set aside.

3. Lower heat and melt butter in the same skillet. Add garlic and sauté until fragrant, about 1-2 minutes.

4. Pour in heavy cream and simmer for 3-5 minutes until slightly thickened. Add reserved pasta water as needed to adjust consistency.

5. Toss in the cooked linguine, followed by the seared beef and any juices. Stir gently to combine and warm through.

6. Finish with fresh parsley and Parmesan. Serve hot.

Notes

Be sure not to overcook the beef—just a quick sear keeps it juicy and tender.

For an even creamier texture, stir in a spoonful of mascarpone or cream cheese at the end.
