Ingredients

1 lb ground beef

1 cup uncooked white rice

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 ½ cups beef broth

1 cup shredded cheddar cheese (plus more for topping)

½ tsp salt

½ tsp black pepper

½ tsp paprika

Fresh parsley, chopped (for garnish)

Olive oil (for sautéing)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat and set aside.
  3. In the same skillet, add olive oil, diced onion, and bell pepper. Sauté until soft. Add garlic and cook for 30 seconds.
  4. In a large bowl, mix cooked beef, sautéed vegetables, uncooked rice, cream of mushroom soup, beef broth, 1 cup cheddar cheese, salt, pepper, and paprika.
  5. Pour the mixture into a greased 9×13-inch baking dish. Top with more cheddar cheese.
  6. Cover with foil and bake for 45 minutes.
  7. Uncover and bake for another 10–15 minutes until cheese is melted and bubbly.
  8. Let rest 5 minutes before serving. Garnish with parsley.
