Ingredients
1 cup jasmine rice
1 1/2 cups water
1/2 teaspoon salt
1 tablespoon olive oil
1 tablespoon unsalted butter (for onions)
1 large yellow onion, thinly sliced
2 tablespoons unsalted butter (for rice)
1 tablespoon chopped fresh parsley
1 clove garlic, minced (optional)
Instructions
1. Rinse jasmine rice under cold water until water runs clear.
2. Cook rice in 1 1/2 cups of water with salt using stovetop or rice cooker.
3. In a skillet, heat olive oil and 1 tablespoon butter over medium heat.
4. Add sliced onions and cook for 15–20 minutes, stirring often, until golden and caramelized.
5. If using garlic, add it in the last 2 minutes of cooking the onions.
6. Once rice is cooked, fluff with a fork and mix in the remaining 2 tablespoons butter.
7. Stir in caramelized onions and chopped parsley.
