Ingredients

1 lb raw shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

2 cups cooked white rice

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1/2 cup guacamole

1/2 cup fresh tomato salsa

Fresh cilantro, chopped

1 lime, halved


Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, cumin, paprika, salt, and pepper.
  2. Heat a skillet over medium-high heat. Sear shrimp 2-3 minutes per side until pink and lightly charred.
  3. Warm black beans and corn. Prepare guacamole and salsa if making from scratch.
  4. Layer cooked rice in bowls. Top with shrimp, beans, corn, guacamole, and salsa.
