Ingredients

3 cups rotini pasta (cooked and cooled)

1 pound cooked shrimp (peeled and deveined)

1 cup peas (thawed if frozen)

1/2 cup red onion (thinly sliced)

1/2 cup bell peppers (diced, any color)

1/4 cup fresh dill (chopped)

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon lemon juice

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and rinse under cold water.

2. If shrimp is not cooked, boil or sauté until pink and opaque. Let cool completely.

3. In a small bowl, whisk together mayonnaise, sour cream, lemon juice, dill, salt, and pepper.

4. In a large bowl, combine cooked pasta, shrimp, peas, red onion, and bell peppers.

5. Pour the dressing over the mixture and toss gently to coat all ingredients evenly.

6. Cover the bowl and chill the salad in the refrigerator for at least 1 hour.

7. Before serving, garnish with additional dill or lemon zest if desired.

Notes

Make sure your pasta is completely cooled and not wet before mixing.

For extra tang, add a teaspoon of Dijon mustard to the dressing.
