Ingredients
1 ripe banana
1/2 cup brown sugar
1/2 cup water
1/4 teaspoon cinnamon
1 pinch nutmeg
1 pinch salt
1 teaspoon vanilla extract
1 tablespoon butter
Instructions
1. Mash the banana in a small saucepan. Add brown sugar, water, cinnamon, nutmeg, and salt. Stir to combine.
2. Simmer over medium heat for 5–7 minutes, stirring continuously until the sugar dissolves and the mixture thickens slightly.
3. Blend the mixture using a blender or immersion blender until smooth and creamy.
4. Return to the pan. Stir in vanilla extract and butter, then simmer for another 2 minutes until glossy.
5. Optionally, strain through a fine mesh sieve for a silky texture. Let cool and transfer to a jar. Store in the fridge.
Notes
For a thicker syrup, simmer a bit longer before blending.
You can freeze it in ice cube trays for longer storage and single-serve portions.
