Ingredients
Chicken Stew:
2 lbs boneless, skinless chicken breasts or thighs
4 cups chicken broth
1 cup chopped carrots
1 cup chopped celery
1 small onion, diced
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 tsp dried parsley
1 can cream of chicken soup (10.5 oz)
2 tbsp butter, cubed
Dumplings:
2 cups all-purpose flour
1 tbsp baking powder
½ tsp salt
1 cup milk
4 tbsp butter, melted
Optional: chopped fresh parsley for garnish
Instructions
- Layer chopped carrots, celery, onion, and minced garlic in the bottom of your slow cooker.
- Place chicken on top of the vegetables and season with salt, pepper, thyme, and parsley.
- Pour in chicken broth, add cubed butter, and spoon cream of chicken soup over the top (no need to stir).
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Once the chicken is cooked through, remove it, shred with forks, and return it to the slow cooker. Stir gently.
- In a bowl, mix flour, baking powder, and salt. Add melted butter and milk; stir until a thick dough forms.
- Drop spoonfuls of dumpling dough on top of the stew. Cover and cook on HIGH for 30–40 minutes until dumplings are puffed and cooked through.
- Garnish with fresh parsley and serve warm.
