2 medium sweet potatoes, cubed
1 tablespoon olive oil (for roasting)
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for skillet)
1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 can (15 oz) black beans, drained and rinsed
1 teaspoon ground cumin
1 teaspoon chili powder
3 cups cooked white or jasmine rice
1/4 cup chopped fresh cilantro
Instructions
1. Preheat the oven to 425°F. Toss cubed sweet potatoes with olive oil, paprika, salt, and pepper. Roast for 20–25 minutes until tender.
2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in garlic and cook 1 minute.
