Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp ground cumin

Salt and pepper to taste

For the Salad:

4 cups mixed greens

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

For the Yogurt Sauce:

1/2 cup plain Greek yogurt

1 tbsp lemon juice

1 clove garlic, minced

1 tsp dried or fresh chopped mint

Salt and pepper to taste


Instructions

  1. Rub chicken with olive oil, paprika, garlic powder, cumin, salt, and pepper. Marinate for 10–15 minutes.
  2. Grill chicken over medium-high heat, 5–6 minutes each side. Let rest, then slice into strips.
  3. Toss greens, tomatoes, cucumber, and red onion in a large bowl.
  4. Whisk yogurt, lemon juice, garlic, mint, salt, and pepper for the sauce.
