Ingredients
1 lb boneless, skinless chicken breast or thighs, sliced
1 red bell pepper, thinly sliced
1 cup broccoli florets
1 carrot, julienned
2 tbsp vegetable oil
4 garlic cloves, minced
½ tsp crushed red pepper flakes
¼ cup low-sodium soy sauce
2 tbsp hoisin sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1 tsp sesame oil
1 tbsp cornstarch + 2 tbsp water (slurry)
2 cups cooked jasmine or basmati rice
Green onions for garnish (optional)
Instructions
- In a bowl, mix soy sauce, hoisin, rice vinegar, brown sugar, sesame oil, and the cornstarch slurry. Set aside.
- Heat 1 tbsp oil in a skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5 minutes. Remove.
- Add remaining oil. Stir in garlic and red pepper flakes for 30 seconds.
- Add broccoli, carrots, and bell pepper. Stir fry for 3-4 minutes until crisp-tender.
- Return chicken to the skillet. Add sauce. Stir and simmer for 2-3 minutes until thickened.
- Serve over rice and top with green onions.
