Ingredients

200g shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

2 cups cooked white rice

1 cup corn kernels

1 cup black beans

1 avocado, sliced or cubed

1 cup shredded red cabbage

1/4 cup chopped fresh cilantro

2 tablespoons sriracha

1 tablespoon lime juice

1 teaspoon honey or mayo

Instructions

1. In a bowl, toss shrimp with olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper. Let marinate for 10–15 minutes.

2. Heat skillet or grill pan over medium-high. Cook shrimp 2–3 minutes per side until charred and opaque. Set aside.

3. Mix sriracha, lime juice, and honey or mayo in a bowl to create the spicy drizzle.

4. Divide cooked rice into bowls and layer with black beans and corn.

5. Top with red cabbage, avocado, and cilantro.

6. Add grilled shrimp to each bowl.

7. Drizzle spicy sauce over the top and serve immediately.

Notes

Use tail-off shrimp for easier eating.

Make the spicy drizzle ahead and refrigerate up to 3 days.
