Ingredients

1 lb steak, cubed (sirloin or ribeye)

8 oz rotini pasta

1 cup heavy cream

3/4 cup grated Parmesan cheese

3 cloves garlic, minced

3 tbsp butter

1 tbsp olive oil

1 tbsp fresh parsley, chopped

1/4 tsp chili flakes (optional)

Salt and black pepper to taste


Instructions

1. Cut steak into bite-sized cubes, pat dry, and season with salt and pepper.

2. Heat butter and olive oil in a skillet. Sear steak bites until browned and cooked to preferred doneness. Set aside.

3. Cook rotini pasta in salted boiling water until al dente. Reserve some pasta water and drain.

4. In the same skillet, melt butter and sauté garlic until fragrant.

5. Pour in heavy cream, bring to a simmer, and stir in Parmesan until smooth. Season with salt and pepper.

6. Add rotini to the sauce, toss to coat. Return steak bites to the skillet.

7. Garnish with parsley and optional chili flakes. Serve warm.

Notes

For extra richness, add a splash of pasta water or more cream to loosen the sauce as needed.

Let the steak rest after cooking to retain its juiciness before adding back to the pasta.
