Ingredients

1 cup fresh strawberries

8 oz cream cheese, softened

1/3 cup powdered sugar

1 tsp vanilla extract

1 cup whipped cream or Cool Whip

2 cups Rice Krispies or cooked sweet sushi rice

1 cup white chocolate chips (or mini marshmallows)

1 cup crushed Golden Oreos or shortbread cookies

Extra whipped cream and strawberries for garnish


Instructions

1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream and set aside.

2. Melt white chocolate or marshmallows and combine with Rice Krispies or cooked sushi rice until evenly coated.

3. Spread the rice mixture onto parchment paper in a thin rectangular layer.

4. Evenly spread cheesecake mixture over the rice layer.

5. Line whole strawberries down the center and roll tightly using the parchment to assist.

6. Refrigerate the roll for 30 minutes until set.

7. Slice into 1-inch pieces with a sharp knife.

8. Roll each piece in crushed cookies.

9. Garnish with a dollop of whipped cream and a halved strawberry on top.

For clean slices, chill longer and use a hot knife.
