Ingredients

2 tablespoons olive oil or butter

8 ounces mushrooms, chopped

2 cloves garlic, minced

8 ounces cream cheese, softened

1/2 cup sour cream

1 teaspoon fresh thyme (or 1/2 tsp dried)

1/4 teaspoon salt

1/4 teaspoon black pepper

1 cup mozzarella cheese, shredded (divided)

1/4 cup parmesan cheese, grated

2 green onions, chopped


Instructions

1. Heat olive oil or butter in a skillet over medium heat. Add chopped mushrooms and sauté until golden brown, about 8–10 minutes. Add garlic and cook for 1 more minute.

2. Lower the heat and stir in the cream cheese, sour cream, thyme, salt, and pepper. Mix until smooth and creamy.

3. Stir in half of the mozzarella and all of the parmesan. Fold in the green onions.

4. Transfer the mixture to an oven-safe dish. Top with remaining mozzarella.

5. Bake at 375°F for 15–20 minutes or until bubbly and golden.

6. Garnish with extra green onions or thyme. Serve hot with bread, crackers, or veggies.

Notes

For even more flavor, mix in a splash of dry white wine when sautéing mushrooms.
