Ingredients

1 ½ lbs boneless skinless chicken breasts

2 cups prepared stuffing (boxed or homemade)

2 tablespoons unsalted butter

½ cup diced onion

½ cup diced celery

½ cup chicken broth

1 teaspoon poultry seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup prepared chicken or turkey gravy (optional)


Instructions

1. Preheat the oven to 375°F and grease a baking dish.

2. In a skillet, melt butter over medium heat and sauté onion and celery until softened.

3. In a mixing bowl, combine sautéed vegetables with stuffing mix and chicken broth. Stir until moist and cohesive.

4. Butterfly the chicken breasts, being careful not to cut all the way through.

5. Season both sides of the chicken with salt, pepper, and poultry seasoning.

6. Stuff each chicken breast with the prepared stuffing and place in the baking dish.

7. Cover with foil and bake for 25 minutes.

8. Remove foil and bake for an additional 10–15 minutes or until chicken reaches 165°F internally.
