Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
24 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
2 teaspoons vanilla extract
½ cup red and green sprinkles
Whipped cream, for topping (optional)
Extra sprinkles, for garnish (optional)
Instructions
1. Preheat oven to 325°F and line the bottom of a springform pan with parchment.
2. Mix graham cracker crumbs and melted butter, then press into pan. Bake for 8 minutes.
3. In a large bowl, beat cream cheese until smooth. Add sugar and blend well.
4. Add eggs one at a time, mixing thoroughly after each.
5. Mix in sour cream and vanilla extract until smooth.
6. Gently fold in the red and green sprinkles.
7. Pour batter over cooled crust and smooth the top.
8. Place the springform pan in a larger roasting pan and add hot water halfway up the sides.
9. Bake at 300°F for 1 hour. Turn off the oven and let the cheesecake sit inside for another hour.
10. Cool completely, then refrigerate for at least 4 hours or overnight.
11. Garnish with whipped cream and extra sprinkles before serving.

For clean slices, dip your knife in warm water and wipe between cuts.
