Ingredients
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 pound ground sausage (Italian or breakfast-style)
1 small onion, diced
2 cloves garlic, minced
1 cup bell peppers, diced (red and green mix)
1 cup green peas (frozen or fresh)
1 ½ cups shredded mozzarella or cheddar cheese
Instructions
1. Preheat oven to 400°F. Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20 minutes until tender and slightly crisp.
2. In a skillet, cook ground sausage over medium heat until browned. Drain any excess fat.
3. In the same skillet, sauté onion, garlic, and bell peppers until soft. Add peas and cook for 2 minutes.
4. In a casserole dish, layer roasted sweet potatoes, sausage, and sautéed veggies.
5. Top with shredded cheese and bake at 375°F for 15–20 minutes until cheese is melted and bubbly.
