Ingredients

1 lb ground beef

2 medium sweet potatoes, peeled and cubed

2 medium zucchinis, sliced

1 small onion, chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley or cilantro, chopped (optional)


Instructions

  1. Wash and slice zucchinis; peel and cube sweet potatoes; chop onion and garlic.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Add sweet potatoes, cook for 10 minutes until tender and browned. Remove and set aside.
  3. Add remaining oil. Sauté onion and garlic for 1-2 minutes. Add ground beef; cook until browned. Drain excess fat if needed.
  4. Stir in zucchini, smoked paprika, oregano, salt, and pepper. Cook 5-7 minutes until zucchini is slightly tender.
  5. Return sweet potatoes to the skillet, stir, and heat through for 2-3 minutes. Top with chopped herbs if using.
