Ingredients
1/2 lb ground beef
1 packet taco seasoning
1/4 cup water
1/2 cup refried beans
4 small flour tortillas
1 cup Mexican cheese blend
1/4 cup pizza or taco sauce
1/4 cup diced tomatoes
2 tablespoons chopped green onions
1 tablespoon finely chopped red onion
Vegetable oil for frying
Instructions
1. Heat a skillet with a little oil and fry the tortillas until golden and crispy. Drain on paper towels.
2. Cook ground beef in a skillet over medium heat until browned. Drain fat.
3. Add taco seasoning and water. Stir and simmer until thickened.
4. Spread refried beans on one fried tortilla, then top with seasoned beef.
5. Place a second tortilla on top and spread taco sauce over it.
6. Sprinkle shredded cheese over the top and place on a baking sheet.
7. Bake or broil at 400°F for about 5 minutes until cheese is melted.
8. Top with diced tomatoes, green onions, and red onion. Slice and serve hot.
Notes
For extra crispiness, bake the tortillas a few minutes before assembling.
