Ingredients

1 lb ground beef

1 small onion, chopped

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or canned and drained)

1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained

1 cup shredded cheddar cheese, divided

1 box (8.5 oz) cornbread mix

1 large egg

⅓ cup milk

Optional toppings: sour cream, diced tomatoes, chopped green onions, cilantro


Instructions

1. In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.

2. Stir in taco seasoning, tomatoes with green chilies, black beans, and corn. Simmer for 5–7 minutes.

3. In a bowl, prepare cornbread batter according to package instructions. Add half of the shredded cheese to the mix.

4. Preheat oven to 375°F. Grease a 9×13-inch baking dish or oven-safe skillet.

5. Spread the beef mixture into the prepared dish. Pour cornbread batter evenly on top.

6. Sprinkle remaining cheese over the cornbread layer.

7. Bake uncovered for 25–30 minutes or until the cornbread is golden and cooked through.

8. Let cool slightly before serving with your favorite toppings.

Notes

For a spicier kick, add diced jalapeños to the meat mixture or on top before baking.
