Ingredients

1 tablespoon oil

1 tablespoon garlic, minced

1 tablespoon ginger, minced

2 tablespoons red curry paste

1 can (13.5 oz) full-fat coconut milk

3 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon fish sauce

1 lime, juiced

12 frozen dumplings (pork or chicken)

2 tablespoons chopped green onions

2 tablespoons chopped fresh cilantro

1 teaspoon chili oil (optional)


Instructions

1. Heat oil in a pot over medium heat. Add garlic and ginger and sauté for 1-2 minutes.

2. Stir in red curry paste and cook for 1 minute until fragrant.

3. Add coconut milk and broth. Stir well and bring to a simmer.

4. Mix in soy sauce, fish sauce, and lime juice. Taste and adjust seasoning.

5. Drop in frozen dumplings and cook according to package, about 6-8 minutes.
