Ingredients
1 cup unsalted butter, melted
1 1/2 cups granulated sugar
4 large eggs
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
2 tablespoons powdered sugar
Instructions
1. Preheat the oven to 350°F and grease a 9×9-inch baking dish.
2. Melt the butter and let it cool slightly.
3. In a large bowl, whisk together the melted butter and granulated sugar until smooth.
4. Add the eggs one at a time, whisking well after each addition.
5. Stir in the lemon juice, lemon zest, and vanilla extract.
6. In a separate bowl, combine the flour, baking powder, and salt.
7. Add the dry ingredients to the wet ingredients and mix just until combined.
8. Pour the batter into the prepared baking dish and smooth the top.
9. Bake for 35 to 40 minutes, until the edges are golden and the center is just slightly soft.
10. Cool in the pan, dust with powdered sugar, then slice and serve.
Notes
Do not overbake the cake or the center will lose that signature gooey texture, so pull it from the oven when the edges are set and the middle still looks slightly soft.
