Ingredients

1/2 cup unsalted butter (softened)

1/2 cup creamy peanut butter

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

12 large marshmallows

1/2 cup white chocolate chips or vanilla frosting (for melting)

black and orange decorating gel or icing


Instructions

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in the egg and vanilla extract.

4. In a separate bowl, whisk together the flour, baking soda, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

6. Scoop dough into 1-tablespoon balls and slightly flatten each one.

7. Bake for 9–11 minutes or until the edges are lightly golden.

8. While cookies are still warm, press a marshmallow into the center of each cookie. Let sit for 2 minutes, then gently press the marshmallow down slightly.

9. Once cooled, spoon melted white chocolate or vanilla icing around each marshmallow to create the “melted” snow.

10. Use black and orange decorating gel to make eyes, buttons, and noses.

Notes

Use commercial creamy peanut butter for best results.

Allow cookies to fully cool before decorating to prevent icing from melting too much.
