Ingredients

1/2 cup unsalted butter, softened

1/2 cup mascarpone cheese

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon espresso powder

1 tablespoon coffee liqueur (optional)

1 3/4 cups all-purpose flour

1/3 cup Dutch-process cocoa powder

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup powdered sugar (for coating)

2 tablespoons cocoa powder (for dusting)

Instructions

1. Cream together butter, mascarpone, granulated sugar, and brown sugar until light and fluffy.

2. Add eggs one at a time, mixing well after each. Stir in vanilla, espresso powder, and coffee liqueur.

3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.

4. Gradually combine dry ingredients with wet until just mixed.

5. Cover and chill the dough for at least 2 hours or overnight.

6. Scoop into tablespoon-sized balls and roll in powdered sugar.

7. Place on a parchment-lined baking sheet.

8. Bake at 350°F for 10–12 minutes, until cookies puff and crinkle.

9. Let cool slightly, then dust with cocoa powder.

Notes

Chilling the dough is key to getting that signature crinkle and chewy center.

Use Dutch-process cocoa for the richest flavor and beautiful contrast.
