Ingredients

2.5 pounds Yukon Gold potatoes

2 cups heavy cream

2 cloves garlic, minced

1.5 cups Gruyère cheese, shredded

0.5 cup Parmesan cheese, grated

2 teaspoons fresh thyme leaves

1.5 teaspoons salt

0.5 teaspoon black pepper

1 tablespoon butter (for greasing)


Instructions

1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish with butter.

2. Peel and thinly slice the potatoes (about 1/8-inch thick), ideally using a mandoline.

3. In a saucepan, heat the heavy cream with garlic, thyme, salt, and pepper. Simmer gently for 5 minutes.

4. Arrange a single layer of potatoes in the dish. Pour over some infused cream, sprinkle both cheeses.

5. Repeat layers until all ingredients are used, finishing with cheese on top.

6. Cover with foil and bake for 45 minutes.

7. Uncover and bake an additional 20–25 minutes, until top is golden and bubbly.

8. Let it rest 10–15 minutes before serving.

Notes

Always let the gratin rest after baking so the layers firm up before slicing.

For extra flavor, add a pinch of nutmeg or swap Gruyère with white cheddar.
