Ingredients
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
3 cloves garlic minced
8 cups low-sodium chicken or turkey broth
2 teaspoons dried thyme
1 bay leaf
1 teaspoon salt
0.5 teaspoon black pepper
3 cups cooked shredded turkey
3 cups egg noodles
1 tablespoon chopped parsley for garnish
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add onions, carrots, and celery. Sauté for 5-6 minutes until soft.
3. Stir in the garlic and cook for another minute.
4. Pour in broth and add thyme, bay leaf, salt, and pepper. Bring to a simmer.
5. Add shredded turkey and simmer for 10-15 minutes.
6. Stir in egg noodles and cook until just tender, about 6-8 minutes.
7. Remove bay leaf, taste and adjust seasoning.
8. Serve hot, garnished with parsley.
Notes
Slightly undercook noodles if storing for leftovers to avoid mushiness.
You can swap egg noodles with whole wheat or gluten-free pasta if preferred.
