Ingredients

2 cups cooked turkey, shredded or chopped

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

3 carrots, peeled and chopped

2 celery stalks, chopped

1 cup green beans, trimmed and chopped

1 cup corn kernels (fresh, frozen, or canned)

1 cup peas (fresh or frozen)

1 can (14.5 oz) diced tomatoes, with juice

6 cups low-sodium chicken or turkey broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper (or to taste)

Salt to taste

Fresh chopped parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large soup pot over medium heat.

  2. Add diced onion and sauté until translucent, about 3–4 minutes.

  3. Stir in minced garlic and cook for 30 seconds.

  4. Add chopped carrots and celery; cook for about 5 minutes.

  5. Pour in broth and diced tomatoes (with juice).

  6. Stir in thyme, parsley, pepper, and salt. Bring to a boil.

  7. Reduce heat and simmer for 15–20 minutes.

  8. Add cooked turkey, green beans, corn, and peas.

  9. Simmer for another 8–10 minutes.

  10. Adjust seasoning and serve hot with fresh parsley garnish if desired.
