Ingredients

1 lb ground beef (80/20 blend recommended)

1 tbsp olive oil

1/2 small onion, finely diced

2 cloves garlic, minced

1/4 tsp smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese (or slices)

4 slices of white sandwich bread

2 tbsp butter, softened

Optional: sliced tomatoes or pickles for layering


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until soft, about 3 minutes.
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Add ground beef and cook until browned, breaking it up as it cooks.
  5. Season with smoked paprika, salt, and pepper.
  6. Butter one side of each bread slice.
  7. On a skillet, place 2 slices butter-side-down and top with cheese.
  8. Spoon beef mixture over cheese, add optional tomatoes or pickles.
  9. Top with more cheese and remaining bread slices, butter-side-up.
  10. Grill until golden brown on both sides and cheese is melted.
