Ingredients
2 boneless skinless chicken breasts
8 oz fettuccine pasta
1 cup heavy cream
3/4 cup grated parmesan cheese
3 cups broccoli florets
3 cloves garlic, minced
1 tsp lemon zest
2 tbsp olive oil
1/4 cup Greek yogurt
1/2 tsp dried oregano
1/2 tsp dried dill
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat oven to 425°F. Spread broccoli on a parchment-lined baking sheet, drizzle with olive oil, season with salt, pepper, and half the parmesan. Roast for 20–25 minutes until crispy.
2. Cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
3. Season chicken with salt, pepper, oregano, and dill. Sear in olive oil over medium-high heat, 5–6 minutes per side. Rest and slice.
4. In the same skillet, sauté garlic for 30 seconds. Add heavy cream and simmer 2–3 minutes. Stir in remaining parmesan until melted.
5. Remove from heat. Stir in Greek yogurt and lemon zest. Adjust seasoning. Add pasta water if needed.
6. Toss pasta into sauce. Top with sliced chicken and serve with crispy broccoli.
Notes
