Ingredients
12 ounces rigatoni or penne pasta
1.5 pounds chicken breast, cut into bite-sized chunks
2 tablespoons olive oil
2 teaspoons Greek chili seasoning
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon butter
1 small onion, finely chopped
4 garlic cloves, minced
1.25 cups heavy cream
1 cup smoked feta cheese, crumbled
1/2 cup grated parmesan cheese
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
1 bunch asparagus, trimmed
1 tablespoon olive oil (for roasting asparagus)
1/4 cup grated parmesan (for asparagus)
Instructions
1. Preheat oven to 400°F. Toss asparagus with olive oil, salt, pepper, and 1/4 cup parmesan. Roast 15–20 minutes.
2. Bring a pot of salted water to boil. Cook rigatoni until al dente. Drain and set aside.
3. Season chicken with Greek chili seasoning, salt, and pepper.
4. Heat olive oil in skillet. Sear chicken chunks for 6–8 minutes until golden and cooked through. Remove and set aside.
5. In same skillet, melt butter and sauté onion and garlic until soft.
6. Add heavy cream and bring to a low simmer.
7. Stir in smoked feta and parmesan. Mix until smooth.
8. Add parsley and oregano to finish the sauce.
9. Toss cooked pasta in the sauce until fully coated.
10. Plate pasta with chicken and roasted asparagus. Drizzle with extra sauce and garnish with herbs.
Notes
Use smoked feta for best flavor, or mix regular feta with a drop of liquid smoke.
For reheating, add a splash of cream to restore sauce consistency.
