Ingredients
1 cup mashed sweet potato
1/2 cup maple syrup
1/2 cup almond butter
1 teaspoon vanilla extract
1/2 cup cocoa powder
1/2 cup oat flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup chopped walnuts (optional)
Instructions
1. Preheat oven to 400°F and roast sweet potatoes until fork-tender (about 45 minutes). Let cool, then mash.
2. In a bowl, mix 1 cup mashed sweet potato, maple syrup, almond butter, and vanilla extract until smooth.
3. Add cocoa powder, oat flour, baking powder, and salt. Stir to form a thick batter. Fold in walnuts if using.
4. Pour batter into a lined 8×8-inch pan and smooth the top.
5. Bake at 350°F for 25–30 minutes until edges are set and center has moist crumbs.
6. Let cool in pan 15 minutes before slicing for clean edges.
Notes
Roast sweet potatoes instead of boiling to avoid excess moisture.
For nut-free, swap almond butter with sunflower seed butter.
