Ingredients

2 tablespoons unsalted butter melted plus extra to grease the mug

3 tablespoons granulated sugar

1 tablespoon light brown sugar packed

1 large egg yolk room temperature

3 tablespoons milk any kind

1/2 teaspoon vanilla extract

1/3 cup all purpose flour spooned and leveled

1/4 teaspoon baking powder

1/4 teaspoon ground cinnamon

1 pinch salt

1/4 cup finely chopped peeled apple about half a small apple

2 tablespoons powdered sugar for glaze optional

2 teaspoons milk for glaze optional

1/8 teaspoon vanilla extract for glaze optional


Instructions

1. Lightly grease a microwave safe mug at least 12 ounces with a little butter or nonstick spray.

2. Add the butter to the mug and microwave for 15 to 20 seconds until just melted.

3. Stir in the granulated sugar and light brown sugar until the mixture looks smooth and glossy.

4. Whisk in the egg yolk milk and vanilla extract until fully combined with no streaks of egg.

5. Add the flour baking powder cinnamon and salt and gently stir until you no longer see dry flour the batter will be thick.

6. Fold in the finely chopped apple making sure the pieces are evenly distributed through the batter.

7. Microwave the mug cake on high for 60 to 80 seconds until the top is set and springs back lightly while the center still looks soft do not overcook.

8. Let the cake rest for 1 to 2 minutes. In a small bowl stir together the powdered sugar milk and vanilla for the glaze until smooth then drizzle over the warm cake.

9. Serve straight from the mug while warm and enjoy.

Notes

For the softest texture, avoid overcooking the mug cake—start checking at 60 seconds and only add a few seconds at a time, since microwaves vary and an extra 10 to 15 seconds can quickly turn it dry and rubbery.
