Ingredients

1 lb ground sausage

2 tbsp olive oil

1 small onion, diced

3 garlic cloves, minced

2 celery stalks, chopped

2 tbsp tomato paste

1 tsp dried thyme

1/2 tsp salt

1/2 tsp black pepper

4 cups beef broth

2 cups baby carrots, chopped

1 1/2 cups pearl onions

3 cups Yukon gold potatoes, diced


Instructions

1. Heat a large soup pot over medium heat. Add olive oil and sausage. Cook until browned, then remove and set aside.

2. In the same pot, sauté onion, garlic, and celery until fragrant and softened.

3. Stir in tomato paste, thyme, salt, and pepper. Cook for 2 minutes.

4. Pour in beef broth. Add carrots, pearl onions, and potatoes. Simmer for 20–25 minutes until veggies are tender.

5. Return the sausage to the pot. Stir well and simmer for 5 more minutes.

6. Adjust seasoning if needed. Serve hot with crusty bread or biscuits.

Notes

Pearl onions can be swapped for small shallots or even chopped yellow onions if you prefer.

For extra richness, stir in a splash of cream or a sprinkle of Parmesan right before serving.
