Ingredients

1 lb ground beef

4 cups diced potatoes

1 small onion, finely chopped

2 cloves garlic, minced

4 cups beef broth

1 cup whole milk or half-and-half

2 tbsp flour

2 tbsp butter

1 ½ cups shredded cheddar cheese

Salt and pepper to taste

Chopped parsley or chives (optional garnish)


Instructions

  1. Brown the ground beef in a large pot and set aside.
  2. In the same pot, melt butter and sauté onions until translucent. Add garlic.
  3. Sprinkle flour over onions and stir for 1-2 minutes.
  4. Gradually whisk in beef broth.
  5. Add potatoes and browned beef. Simmer for 15-20 minutes until potatoes are tender.
  6. Stir in milk and cheddar cheese until melted and smooth.
