Ingredients
1 lb boneless skinless chicken thighs

2 garlic cloves, minced

2 tbsp soy sauce
1 tbsp honey
1 tbsp olive oil
2 cups cooked jasmine rice
1/2 red bell pepper, thinly sliced
1/2 cucumber, sliced
1/2 cup coconut milk
1 tbsp lime juice
1 tsp lime zest
1 garlic clove, minced (for drizzle)
1 tbsp chopped fresh cilantro
Instructions
1. In a bowl, mix chili powder, paprika, garlic, ginger, soy sauce, honey, and olive oil. Add chicken and marinate for 30 minutes or overnight.
2. Heat a skillet over medium-high heat. Add oil, then sear chicken for 6–7 minutes per side until cooked through. Rest and slice.
