Ingredients
2 tablespoons olive oil
1 tablespoon butter
4 cups diced Yukon Gold potatoes
1/2 pound breakfast sausage
1 red bell pepper, diced
1/2 cup mushrooms, sliced
1 small onion, diced
4 large eggs
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Heat olive oil and butter in a large skillet over medium heat.
2. Add diced potatoes and cook undisturbed for 5–7 minutes until a golden crust forms.
3. Stir potatoes and cook another 5–7 minutes until almost tender.
4. Add onion, red bell pepper, and mushrooms. Sauté until softened and golden.
