Ingredients

1 pound ground beef

2 cups diced potatoes

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup sliced mushrooms

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano

3/4 teaspoon salt (or to taste)

1/2 teaspoon ground black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and sauté until golden and tender, about 10–12 minutes. Remove and set aside.

2. In the same skillet, cook ground beef until browned and cooked through, about 6–8 minutes. Drain any excess fat if needed.

3. Add chopped onion, garlic, and mushrooms. Sauté until softened, about 5 minutes.

4. Stir in sliced bell peppers and cook until just tender, about 3–4 minutes.

5. Return cooked potatoes to the pan. Add paprika, cumin, oregano, salt, and pepper. Stir to coat all ingredients evenly.

6. Cook for an additional 2 minutes to allow flavors to meld.

7. Remove from heat, stir in fresh parsley, and serve warm.
