Ingredients

1 lb thinly sliced beef steak (ribeye or sirloin)

1 small onion, thinly sliced

1 small green bell pepper, thinly sliced (optional)

1 cup shredded mozzarella or provolone cheese

4 large flour tortillas

1 tbsp olive oil or butter

Salt and pepper, to taste

Fresh parsley or cilantro for garnish (optional)

Side of salsa or spicy mayo for dipping (optional)


Instructions

  1. Heat oil or butter in a skillet over medium heat. Sauté onions (and peppers, if using) until softened and caramelized.
  2. Add sliced beef to the skillet, season with salt and pepper, and cook until browned. Mix with onions.
  3. Lay out tortillas. On half of each, add cheese, the beef-onion mixture, then more cheese. Fold over.
  4. Clean the skillet and toast each quesadilla for 2–3 minutes per side until crispy and cheese is melted.
  5. Slice into wedges, garnish if desired, and serve with your favorite dipping sauce.
