  • 3 pieces large chicken breasts or 4 chicken thighs
  • 1 cup BBQ sauce
  • 1 cup chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 tablespoon brown sugar optional
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley or cilantro, chopped optional

Instructions
 

  • Pat the chicken dry and season with salt and black pepper.
  • Heat olive oil or butter in a large skillet over medium heat and sear chicken 3-4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté onion and garlic for 2-3 minutes until softened and fragrant.
  • Pour in chicken broth, scraping the skillet to release browned bits. Stir in BBQ sauce and brown sugar if using. Bring to a gentle simmer.
  • Return chicken to the skillet, cover, and simmer on low for 20-25 minutes until fully cooked and tender.
  • Remove chicken, shred with two forks, and return to the sauce. Stir well to coat.
  • Cook uncovered for 5 more minutes to thicken the sauce. Garnish with parsley or cilantro if desired.

Notes

Best served hot on buns or over rice. Store in airtight containers for up to 4 days or freeze for 2 months.
