  • 12 oz rotini pasta
  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 tbsp chopped fresh parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside.
  • Slice chicken breasts into strips or bite-sized pieces. Season with garlic powder, salt, black pepper, paprika, and a sprinkle of parmesan.
  • In a skillet over medium heat, melt butter with olive oil. Cook chicken until golden and fully cooked, 5–7 minutes per side. Remove and keep warm.
  • In the same skillet, sauté minced garlic until fragrant. Add heavy cream and gradually whisk in cheddar and parmesan until smooth and creamy. Adjust seasoning as needed.
  • Add the cooked rotini to the skillet, tossing to coat with sauce. Let it simmer for 2–3 minutes to absorb flavor.
  • Top the pasta with sliced garlic parmesan chicken, garnish with fresh parsley, and serve hot.

Notes

For extra creaminess, add an additional 1/4 cup of heavy cream while simmering the sauce. To reheat leftovers, add a splash of milk to bring back the creamy texture.
