  • 2 chicken breasts
  • 2 tablespoons Cajun seasoning
  • 12 ounces rotini pasta
  • 2 tablespoons olive oil
  • 4 tablespoons butter (2 for searing chicken, 2 for sauce)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1.5 cups shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup reserved pasta water (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Pat chicken dry, season with Cajun spice, and sear in olive oil and butter for 5–6 minutes per side.
  • Cook rotini pasta until al dente, reserve 1/4 cup pasta water.
  • In skillet, sauté garlic in butter, add cream, mozzarella, and Parmesan, whisking until smooth.
  • Toss pasta in sauce, slice chicken, and place on top. Garnish with parsley.

Notes

For a spicier kick, add extra Cajun seasoning or a pinch of red pepper flakes. Stir cheese in gradually for a silky sauce.
