  • 225 g rotini pasta
  • 2 cups Velveeta cheese, cubed
  • 1 cup mozzarella cheese, shredded
  • 2 boneless chicken breasts
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Cook pasta until al dente, drain and set aside.
  • Season and cook chicken in olive oil until golden and cooked through.
  • Sauté butter and garlic until fragrant.
  • Add heavy cream and Velveeta, stir until smooth.
  • Toss pasta in sauce, top with chicken and mozzarella.
  • Bake at 375°F for 10–12 minutes until bubbly and golden.

Notes

Use freshly grated mozzarella for best results; add a splash of pasta water if sauce is too thick.
