  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 egg beaten
  • 1.5 cups panko breadcrumbs
  • oil for frying vegetable or avocado oil
  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • chopped parsley or chives optional garnish
  • crumbled bacon optional topping

Instructions
 

  • Marinate salmon cubes in buttermilk with a pinch of salt for 15 minutes.
  • Prepare flour mix, whisked egg, and panko in separate bowls.
  • Dredge salmon in flour mix, dip in egg, and coat in panko.
  • Fry salmon pieces in hot oil until golden brown, 2-3 minutes per side.
  • Mix mayo, sriracha, honey, and lime juice for the sauce.
  • Drizzle sauce on salmon, garnish, and serve hot.

Notes

Make sure salmon is dry before marinating. Reheat leftovers in oven or air fryer, not microwave.
