  • 2 cups shredded potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives

Instructions
 

  • Preheat the oven to 400°F (200°C). Grease a muffin tin or baking tray.
  • Peel and shred the potatoes, rinse under cold water, and squeeze out excess moisture.
  • In a large bowl, combine potatoes, cheeses, flour, egg, salt, and pepper. Mix well.
  • Scoop portions into the muffin tin, pressing to form a base. Add extra cheese in the center, cover with more potato mixture, and press gently.
  • Bake for 25-30 minutes until golden brown and crisp around the edges.
  • Garnish with chopped chives and serve warm.

Notes

For extra flavor, add smoked paprika or diced jalapeños to the potato mixture.
