Ingredients
  

  • 1 lb chicken breasts, cut into bite-size pieces
  • 2 tbsp olive oil
  • 1.5 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 oz twisted pasta (rotini or fusilli)
  • 0.5 tsp salt (adjust to taste)
  • 0.25 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions
 

  • Pat chicken dry, cut into bite-sized pieces, and season with Cajun seasoning.
  • Heat olive oil in a skillet over medium-high heat and sear chicken until golden and fully cooked. Remove and set aside.
  • In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté until fragrant.
  • Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese, salt, black pepper, and a pinch of Cajun seasoning.
  • Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water.
  • Toss drained pasta into the creamy sauce, adding reserved pasta water as needed to loosen.
  • Return chicken to the skillet and stir to coat with sauce.
  • Garnish with fresh parsley and serve hot.

Notes

For extra heat, add ½ teaspoon of crushed red pepper. Reheat leftovers with a splash of milk to keep it creamy.
