  • 500 g boneless skinless chicken thighs
  • 2 cloves garlic minced
  • 0.5 cup grated Parmesan cheese
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 0.33 cup chopped sun-dried tomatoes
  • 250 g pappardelle pasta
  • 1 bunch broccolini
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Instructions
 

  • Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.
  • Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
  • In the same pan, sauté garlic until fragrant. Stir in heavy cream and bring to a gentle simmer.
  • Add Parmesan cheese and whisk until smooth.
  • Stir in chopped sun-dried tomatoes, simmer for a few minutes to blend flavors.
  • Cook pasta until al dente. Reserve 1 cup pasta water, drain pasta.
  • Toss broccolini with olive oil, salt, and pepper. Char in a grill pan or skillet until tender.
  • Return chicken to sauce, add pasta, and toss. Adjust consistency with reserved pasta water.
  • Serve pasta with charred broccolini, garnished with parsley.

Notes

For richer flavor, use freshly grated Parmesan instead of pre-shredded. Add a pinch of red pepper flakes for extra heat.
