  • 150 g graham cracker crumbs
  • 80 g unsalted butter, melted
  • 200 g white chocolate, chopped
  • 240 ml heavy whipping cream
  • 120 g cream cheese, softened
  • 50 g powdered sugar
  • 100 g fresh raspberries
  • 30 ml caramel sauce
  • edible flowers (optional)

Instructions
 

  • Prepare the crust by combining graham cracker crumbs and melted butter, then chill for 20 minutes.
  • Melt white chocolate gently over a double boiler and cool slightly.
  • Whip heavy cream to soft peaks.
  • Beat cream cheese and powdered sugar, fold in white chocolate, then fold in whipped cream.
  • Pipe or spoon mousse into tartlet crusts.
  • Garnish with raspberries, caramel drizzle, and edible flowers.

Notes

Best served chilled within a few hours. Store in refrigerator for up to 2 days without garnish.
